- 1 lb (450g) chicken breast, cut into bite-sized pieces
- 1 cup (120g) panko breadcrumbs
- Β½ cup (60g) all-purpose flour
- 2 large eggs, beaten
- Salt and pepper to taste
- Β½ cup (120ml) mayonnaise
- 2 tablespoons sweet chili sauce
- 1 tablespoon sriracha (adjust to taste)
- 1 teaspoon lemon juice
- 1 teaspoon garlic powder
- 2 cups (300g) cooked rice or quinoa
- 1 cup (150g) shredded carrots
- 1 cup (150g) diced cucumber
- 1 cup (150g) shredded cabbage
- Fresh cilantro for garnish
Instructions
- Preheat your oven to 400Β°F (200Β°C). If youβre using a frying pan, heat it over medium-high heat with a little oil.
- In a large bowl, season the chicken pieces with salt and pepper. Dip each piece into the flour, then the beaten eggs, and finally coat with panko breadcrumbs.
- For baking: Place the coated chicken pieces on the prepared baking sheet and spray lightly with cooking spray. Bake for 20-25 minutes or until golden and cooked through.
- For frying: Add the chicken pieces to the heated pan and cook for about 5-7 minutes per side until crispy and golden.
- While the chicken is cooking, whisk together the mayonnaise, sweet chili sauce, sriracha, lemon juice, and garlic powder in a small bowl. Adjust the spice level to your taste.
- In serving bowls, layer the cooked rice or quinoa, shredded carrots, diced cucumber, and shredded cabbage. Top with the crispy chicken.
- Generously drizzle the Bang Bang sauce over the chicken and garnish with fresh cilantro.
Notes
For a gluten-free option, swap out the flour and panko for gluten-free alternatives. Adjust the sriracha in the sauce to make it milder if desired.
