Description

A vibrant bowl filled with crispy, golden chicken, drizzled with a spicy, creamy sauce that makes your taste buds dance. This dish is both satisfying and healthy, perfect for a quick lunch.


Ingredients

  • 1 lb (450g) chicken breast, cut into bite-sized pieces
  • 1 cup (120g) panko breadcrumbs
  • Β½ cup (60g) all-purpose flour
  • 2 large eggs, beaten
  • Salt and pepper to taste
  • Β½ cup (120ml) mayonnaise
  • 2 tablespoons sweet chili sauce
  • 1 tablespoon sriracha (adjust to taste)
  • 1 teaspoon lemon juice
  • 1 teaspoon garlic powder
  • 2 cups (300g) cooked rice or quinoa
  • 1 cup (150g) shredded carrots
  • 1 cup (150g) diced cucumber
  • 1 cup (150g) shredded cabbage
  • Fresh cilantro for garnish

Instructions

  1. Preheat your oven to 400Β°F (200Β°C). If you’re using a frying pan, heat it over medium-high heat with a little oil.
  2. In a large bowl, season the chicken pieces with salt and pepper. Dip each piece into the flour, then the beaten eggs, and finally coat with panko breadcrumbs.
  3. For baking: Place the coated chicken pieces on the prepared baking sheet and spray lightly with cooking spray. Bake for 20-25 minutes or until golden and cooked through.
  4. For frying: Add the chicken pieces to the heated pan and cook for about 5-7 minutes per side until crispy and golden.
  5. While the chicken is cooking, whisk together the mayonnaise, sweet chili sauce, sriracha, lemon juice, and garlic powder in a small bowl. Adjust the spice level to your taste.
  6. In serving bowls, layer the cooked rice or quinoa, shredded carrots, diced cucumber, and shredded cabbage. Top with the crispy chicken.
  7. Generously drizzle the Bang Bang sauce over the chicken and garnish with fresh cilantro.

Notes

For a gluten-free option, swap out the flour and panko for gluten-free alternatives. Adjust the sriracha in the sauce to make it milder if desired.
