Ingredients
- 4 large eggs (room temperature if possible)
- 1 cup cottage cheese (full-fat or low-fat)

- 2 teaspoons vanilla extract
- 1 cup rolled oats (old-fashioned oats preferred)

- 1 1/2 cups fresh or frozen blueberries

Instructions
- Preheat your oven to 350°F (175°C). Grease an 8×8-inch baking dish with butter or coconut oil. For easy removal, line with parchment paper if desired.
- In a large mixing bowl, whisk together the eggs until well-blended and frothy. Add cottage cheese, milk, maple syrup or honey, and vanilla extract. Whisk until smooth (blend for a smoother texture if preferred).
