  • 4 oz cream cheese, softened
  • 2 tablespoons granulated sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon lemon zest
  • 1/2 cup fresh or frozen blueberries
  • 1 tablespoon sugar
  • 1 teaspoon cornstarch
  • 1 teaspoon lemon juice (optional)
  • 1/2 cup powdered sugar (for glaze, optional)
  • 12 teaspoons milk (for glaze, any kind)
  • 1/4 teaspoon vanilla extract (for glaze)

Instructions

  1. Take the puff pastry out of the freezer and let it thaw for about 15-20 minutes until pliable but still cold.
  2. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper or a silicone mat.
  3. In a small bowl, toss together blueberries, 1 tablespoon sugar, 1 teaspoon cornstarch, and 1 teaspoon lemon juice. Set aside.
  4. In a medium bowl, beat the cream cheese until smooth. Add 2 tablespoons sugar, 1 teaspoon vanilla, and 1 teaspoon lemon zest. Beat until fluffy and combined.
  5. Unfold the puff pastry on a lightly floured surface. Cut into 6 rectangles (about 3×4 inches each). Place on the prepared baking sheet.
  6. Spread about 1 tablespoon of cream cheese filling down the center of each rectangle, leaving a border. Spoon a tablespoon of the blueberry mixture on top. Fold over the edges to create a rim or leave flat. Brush exposed pastry edges with beaten egg.
  7. Bake for 13-16 minutes, or until the pastry is puffed and deep golden brown and the filling is bubbling.
  8. Mix powdered sugar with milk and vanilla to make a thick but pourable glaze. Drizzle over warm pastries. Let cool for 5 minutes before serving.

Notes

Work with chilled puff pastry for best results. Don’t overfill to avoid leaks. You can swap in other berries or use gluten-free/dairy-free alternatives. The glaze is optional but adds a bakery finish. Store leftovers in the fridge for up to 3 days or freeze unglazed pastries for up to 1 month.
