  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 8 oz cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup heavy whipping cream, cold (or whipped topping)
  • Zest of 1 lemon (optional)
  • 1 can (21 oz) blueberry pie filling OR 2 cups fresh or frozen blueberries with 1/4 cup sugar and 1 tablespoon lemon juice
  • Optional garnish: fresh blueberries, lemon zest curls, mint leaves

Instructions

  1. In a medium bowl, combine graham cracker crumbs, granulated sugar, and melted butter. Mix until evenly moistened.
  2. Press the mixture firmly into the bottom of a 9×9-inch dish. Chill in the fridge for about 10 minutes.
  3. In a large mixing bowl, beat softened cream cheese with powdered sugar until smooth (2-3 minutes).
  4. Add vanilla extract and lemon zest (if using); beat until just combined.
  5. In a separate bowl, whip cold heavy cream to stiff peaks. Gently fold whipped cream into the cream cheese mixture in two batches.
  6. Spread the creamy layer evenly over the chilled crust.
  7. For the topping: If using pie filling, spoon it over the creamy layer. For homemade, cook blueberries, sugar, and lemon juice over medium heat until thickened (5-7 minutes), cool, then spread on top.
  8. Cover and refrigerate for at least 4 hours or overnight.
  9. Before serving, garnish with fresh blueberries, lemon zest curls, or mint leaves. Slice and serve chilled.

Notes

Chill the dessert for at least 4 hours (overnight is best) for clean slices and melded flavors. For gluten-free, use gluten-free graham crackers; for dairy-free, use vegan cream cheese and coconut whipped topping. If making homemade blueberry topping, cool it before spreading. For a firmer crust, press well and chill longer. Garnish just before serving for best presentation.
