Blueberry Delight is a dreamy, no-bake dessert featuring a buttery graham cracker crust, a creamy lemon-kissed filling, and a sweet blueberry topping. It’s quick to assemble, crowd-pleasing, and perfect for any occasion year-round.
Ingredients
- 1 1/2 cups graham cracker crumbs
- 1/4 cup granulated sugar
- 1/2 cup unsalted butter, melted
- 8 oz cream cheese, softened
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 cup heavy whipping cream, cold (or whipped topping)
- Zest of 1 lemon (optional)
- 1 can (21 oz) blueberry pie filling OR 2 cups fresh or frozen blueberries with 1/4 cup sugar and 1 tablespoon lemon juice
- Optional garnish: fresh blueberries, lemon zest curls, mint leaves
Instructions
- In a medium bowl, combine graham cracker crumbs, granulated sugar, and melted butter. Mix until evenly moistened.
- Press the mixture firmly into the bottom of a 9×9-inch dish. Chill in the fridge for about 10 minutes.
- In a large mixing bowl, beat softened cream cheese with powdered sugar until smooth (2-3 minutes).
- Add vanilla extract and lemon zest (if using); beat until just combined.
- In a separate bowl, whip cold heavy cream to stiff peaks. Gently fold whipped cream into the cream cheese mixture in two batches.
- Spread the creamy layer evenly over the chilled crust.
- For the topping: If using pie filling, spoon it over the creamy layer. For homemade, cook blueberries, sugar, and lemon juice over medium heat until thickened (5-7 minutes), cool, then spread on top.
- Cover and refrigerate for at least 4 hours or overnight.
- Before serving, garnish with fresh blueberries, lemon zest curls, or mint leaves. Slice and serve chilled.
Notes
Chill the dessert for at least 4 hours (overnight is best) for clean slices and melded flavors. For gluten-free, use gluten-free graham crackers; for dairy-free, use vegan cream cheese and coconut whipped topping. If making homemade blueberry topping, cool it before spreading. For a firmer crust, press well and chill longer. Garnish just before serving for best presentation.
