Instructions
- Prepare the Corn: If using fresh corn, cut the kernels off the cob. If using frozen corn, thaw it beforehand. Drain canned corn well.
- Mix Dry Ingredients: In a mixing bowl, combine the flour, baking powder, salt, and black pepper. Whisk together until well combined.
- Combine Wet Ingredients: In another bowl, beat the eggs, then add the milk and mix until smooth.
- Mix Together: Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix!
- Add Corn and Cheese: Gently fold in the sweet corn, shredded cheese, and chopped green onions until evenly distributed.
- Heat the Oil: In a skillet, heat about ½ inch of oil over medium heat. You can test if the oil is ready by dropping a small amount of batter into it; it should sizzle immediately.
- Fry the Fritters: Using a spoon or small ice cream scoop, drop spoonfuls of the batter into the hot oil. Don’t overcrowd the pan—fry in batches if necessary.
- Cook Until Golden: Fry for 3-4 minutes on one side or until golden brown, then flip and cook for another 2-3 minutes on the other side.
- Drain: Once golden and cooked through, remove the fritters and place them on paper towels to drain excess oil.

Notes
