A delicious, easy cheesy hamburger rice casserole that’s perfect for busy weeknight dinners or a cozy family lunch. Made all in one pan with simple, comforting ingredients.

- 1 lb ground beef
- 1 cup long grain white rice, uncooked
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 bell pepper, diced (any color)
- 1 (14.5 oz) can diced tomatoes, undrained
- 2 cups beef broth
- 1 cup shredded cheddar cheese, plus extra for topping
- 1/2 cup shredded mozzarella cheese
- 2 tbsp tomato paste
- 1 tsp dried Italian seasoning
- 1/2 tsp paprika
- 1/4 tsp crushed red pepper (optional)
- Salt and black pepper, to taste
- 2 tbsp olive oil
- Fresh parsley, for garnish
Instructions
- Heat olive oil in a large oven-safe skillet over medium heat. Add diced onion and bell pepper; sauté 2-3 minutes until softened.
- Add garlic and cook 30 seconds, stirring constantly.
- Add ground beef to the skillet. Cook, breaking up with a spoon, until no longer pink (about 5-6 minutes). Drain excess fat.
- Stir in tomato paste, Italian seasoning, paprika, crushed red pepper, salt, and black pepper. Cook for 1 minute.
- Add uncooked rice, canned tomatoes (with juice), and beef broth. Mix well, scraping up any browned bits.
- Bring to a simmer, then reduce heat to low. Cover and cook for 18-20 minutes, stirring once or twice, until rice is tender and most liquid is absorbed.
- Turn off heat. Stir in 1 cup cheddar cheese and 1/2 cup mozzarella. Top with extra cheese if desired.
- If using oven-safe pan, broil on high for 2-3 minutes until cheese is bubbly and golden. Or, cover and let cheese melt off-heat.
- Garnish with fresh parsley. Serve hot!
Notes
You can substitute ground turkey or chicken for a lighter version. Use leftover cooked rice by reducing broth and cooking time. For extra flavor, try fire-roasted tomatoes or smoked paprika. Make it ahead and reheat for easy lunches. Garnish with green onions or swap parsley for a different finish.
