- 3 tablespoons unsalted butter
- 4 cloves garlic, minced
- 1 cup heavy cream (or substitute with half-and-half for a lighter version)
- 1 cup chicken broth (low-sodium preferred)
- 1 cup fresh spinach (or kale), roughly chopped
- 1/2 cup grated Parmesan cheese
- 1 teaspoon Italian seasoning (or a mix of dried basil, oregano, and thyme)
- Fresh parsley, chopped (for garnish)
Instructions
- In a large skillet, melt 1 tablespoon of butter over medium heat. Season the diced chicken with salt and pepper. Add it to the skillet and cook for about 5-7 minutes, until golden brown and cooked through. Remove the chicken from the pan and set aside.
