  • 2 boneless, skinless chicken breasts, diced (about 1 pound or 450 grams)
  • Salt and pepper, to taste
  • 1 package of gnocchi (about 16 ounces or 450 grams)
  • 3 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1 cup heavy cream (or substitute with half-and-half for a lighter version)
  • 1 cup chicken broth (low-sodium preferred)
  • 1 cup fresh spinach (or kale), roughly chopped
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning (or a mix of dried basil, oregano, and thyme)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a large skillet, melt 1 tablespoon of butter over medium heat. Season the diced chicken with salt and pepper. Add it to the skillet and cook for about 5-7 minutes, until golden brown and cooked through. Remove the chicken from the pan and set aside.
  2. In the same skillet, add the remaining butter. Once melted, add the minced garlic and sauté for about 1 minute until fragrant. Be careful not to burn it!
  3. Pour in the heavy cream and chicken broth, stirring to combine. Bring it to a gentle simmer.
  4. Stir in the gnocchi and let them cook in the sauce for about 3-4 minutes until they float to the top. This indicates they’re done!
  5. Return the cooked chicken to the skillet along with the chopped spinach and Italian seasoning. Stir everything together and let it simmer for another 2-3 minutes until the spinach wilts.
  6. Stir in the grated Parmesan cheese until melted and creamy. Taste and adjust seasoning if needed.
