- 1 lb chicken breast, diced

- 1 teaspoon onion powder
- 1 cup shredded sharp cheddar cheese

Instructions
- In a large pot, bring salted water to a boil. Add the elbow macaroni and cook according to package instructions until al dente (about 8-10 minutes). Drain and set aside.
- In a skillet, heat the olive oil over medium heat. Season the diced chicken with salt and pepper. Add to the skillet and cook for about 5-7 minutes or until the chicken is cooked through and no longer pink in the center. Remove from heat and set aside.
- In the same skillet, melt the butter over medium heat. Whisk in the flour and cook for about 1 minute to form a roux. Gradually whisk in the milk, ensuring there are no lumps. Continue to whisk until the mixture thickens (about 3-5 minutes).
- Once the sauce is thickened, reduce heat to low. Stir in the cheddar and mozzarella cheeses until melted and smooth.
