- 2 cups cooked chicken, shredded
- 1 cup shredded cheese (cheddar or Monterey Jack)
- 1/2 cup salsa
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon cumin
- Salt and pepper, to taste
- 10–12 small corn or flour tortillas
- Cooking spray or olive oil for brushing
Instructions
- Preheat your oven to 425°F (220°C).
- In a mixing bowl, combine the shredded chicken, cheese, salsa, garlic powder, onion powder, cumin, salt, and pepper. Mix until well combined.
- Wrap the tortillas in a damp paper towel and microwave for about 30 seconds to make them pliable.
- Take a tortilla, place about 2-3 tablespoons of the filling in the center, and roll it tightly from one end to the other. Place seam side down on the baking sheet. Repeat until all filling is used.
- Lightly spray or brush the tops of the taquitos with cooking spray or olive oil.
- Place the baking sheet in the preheated oven and bake for about 15-20 minutes, or until the taquitos are golden brown and crispy.
- Let them cool for a few minutes before serving. Enjoy with your favorite dipping sauces.
