Description
This recipe for Shrimp and Sausage Dirty Rice is packed with flavor and is a fantastic meal prep option that you can enjoy throughout the week.
Ingredients
Scale
- 1 cup long-grain white rice (or brown rice for a healthier option)
- 2 cups chicken broth (or vegetable broth for a vegetarian version)
- 1 tablespoon olive oil
- 1 pound shrimp, peeled and deveined
- 1 pound smoked sausage, sliced (Andouille sausage works great!)
- 1 medium onion, diced
- 1 green bell pepper, diced
- 2 ribs celery, diced
- 3 cloves garlic, minced
- 1 teaspoon Cajun seasoning (or to taste)
- 1 teaspoon paprika
- Salt and pepper to taste
- Chopped green onions for garnish
- Fresh parsley (optional) for garnish
Instructions
- Start by rinsing the rice under cold water until the water runs clear.
- In a pot, combine the rinsed rice and chicken broth. Bring to a boil, then reduce heat to low, cover, and simmer for 18-20 minutes.
- While the rice is cooking, heat olive oil in a large skillet over medium-high heat. Add the sliced sausage and cook until browned, about 5-7 minutes.
- Add the diced onion, green bell pepper, and celery to the skillet. Cook for another 5 minutes, stirring occasionally.
- Stir in the minced garlic, Cajun seasoning, and paprika. Cook for an additional minute until fragrant.
- Next, add the shrimp to the skillet. Cook until they turn pink and opaque, about 3-4 minutes.
- Once the shrimp are done, fold in the cooked rice until everything is well combined. Taste and adjust seasoning with salt and pepper as needed.
- Remove from heat and let it sit for a few minutes to allow flavors to meld together. Garnish with chopped green onions and parsley before serving.
