  • Author: Rachel Summers
  • Total Time: 45 minutes
  • Yield: 20 egg rolls 1x

Description

These golden brown egg rolls are a crispy, savory treat that are perfect for any occasion. Easy to make and endlessly customizable, they are sure to impress your guests!

Ingredients

Scale
  • 1 pound ground pork (or chicken, turkey, or tofu for a vegetarian option)
  • 2 cups cabbage, finely shredded
  • 1 cup carrots, grated
  • 1 cup bean sprouts
  • 3 green onions, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • Salt and pepper, to taste
  • 20 egg roll wrappers (store-bought or homemade)
  • Vegetable oil (for frying)

Instructions

  1. In a large skillet or wok, heat a tablespoon of vegetable oil over medium-high heat. Add the ground pork, breaking it apart as it cooks. Once it’s browned, drain excess fat if necessary.
  2. Add the cabbage, carrots, bean sprouts, green onions, garlic, and ginger to the skillet. Stir-fry for about 5-7 minutes until the vegetables are tender.
  3. Stir in the soy sauce and sesame oil, seasoning with salt and pepper to taste. Remove from heat and let the filling cool slightly.
  4. Lay an egg roll wrapper on a clean surface with one corner facing you. Place about 2 tablespoons of the filling near the corner closest to you.
  5. Fold the corner over the filling, then fold in the sides, and roll it up tightly. Seal the edge with a little water. Repeat with remaining wrappers and filling.
  6. In a deep frying pan or pot, heat about 2 inches of vegetable oil over medium heat. Once hot, carefully add egg rolls a few at a time, frying until golden brown (about 3-4 minutes per side).
  7. Use a slotted spoon to remove the egg rolls and drain them on paper towels. Allow to cool slightly before serving.

Notes

Feel free to customize the filling with your favorite ingredients. Ensure to seal the wrappers well to prevent them from opening during frying.
