- 1 lb (450g) ground beef, preferably lean
- 1 small onion, diced
- 1 bell pepper, diced
- 3 cups (720ml) beef broth
- 8 oz (225g) cream cheese, softened
- 1 cup (100g) shredded cheddar cheese
- 1 tsp garlic powder
- 1 tsp smoked paprika
- Salt and pepper to taste
- 1 cup (150g) cauliflower florets
- 1 tbsp olive oil
- Chopped green onions for garnish
Instructions
- In your large pot, heat the olive oil over medium heat. Add the ground beef, breaking it apart with your spatula. Cook until browned, about 5-7 minutes.
- Stir in the diced onion and bell pepper. SautΓ© for another 3-4 minutes until softened.
- Sprinkle in the garlic powder, smoked paprika, salt, and pepper. Mix well to combine.
- Add the beef broth and bring the mixture to a boil.
- Once boiling, stir in the cauliflower florets. Reduce the heat to low and cover. Let it simmer for about 10 minutes or until the cauliflower is tender.
- Remove the pot from heat. Add the softened cream cheese, stirring until fully melted and combined.
- Stir in the shredded cheddar cheese until melted and creamy. Taste and adjust seasoning if necessary.
- Ladle the soup into bowls and garnish with chopped green onions. Enjoy it warm!
Notes
Feel free to personalize this soup by swapping out the ground beef for ground turkey or chicken. You can also use zucchini instead of cauliflower if preferred.
