This Easy Cottage Cheese Alfredo is a healthier twist on traditional Alfredo sauce, using cottage cheese to create a creamy and satisfying dish without the guilt. Perfect for busy weeknights or impressing guests!

- 1 cup cottage cheese, low-fat or full-fat, drained
- 1/4 cup unsalted butter
- 2 cloves garlic, minced
- 1/2 cup grated Parmesan cheese
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon nutmeg (optional)
- 1/2 cup milk (use almond milk for a dairy-free option)
- 8 ounces fettuccine or your favorite pasta
- Fresh parsley for garnish (optional)
Instructions
- In a large pot, bring salted water to a boil. Add the pasta and cook according to package instructions until al dente (usually about 8-10 minutes). Reserve 1/2 cup of pasta water, then drain the pasta and set aside.
- In a skillet over medium heat, melt the butter and sauté the minced garlic until fragrant (about 1 minute). Be careful not to let it brown!
- In a blender, combine the sautéed garlic and butter, cottage cheese, Parmesan cheese, milk, salt, pepper, and nutmeg (if using). Blend until smooth and creamy. If it’s too thick, add a little reserved pasta water to reach your desired consistency.
- In the skillet, add the drained pasta and pour the sauce over it. Toss everything together until the pasta is well coated. If necessary, add more pasta water to loosen the sauce.
