- 1 pound white fish fillets (like tilapia or cod), skinless
- 2 tablespoons olive oil
- 2 teaspoons chili powder
- 1 teaspoon cumin
- 1 teaspoon garlic powder
- Salt and pepper to taste
- ½ cup mayonnaise
- 1–2 tablespoons sriracha (adjust for heat preference)
- 1 teaspoon lime juice
- 2 medium tomatoes, diced
- ½ small red onion, finely chopped
- 1 jalapeño, seeds removed and diced
- ¼ cup fresh cilantro, chopped
- Juice of 1 lime
- Salt to taste
- 8 small corn or flour tortillas
- Lime wedges for serving
Instructions
- In a mixing bowl, combine olive oil, chili powder, cumin, garlic powder, and a pinch of salt and pepper. Add the fish fillets and coat them evenly. Cover and let them marinate for about 15 minutes while you prepare the rest.
- In a small bowl, whisk together mayonnaise, sriracha, and lime juice until well combined. Taste and adjust the spice level as needed. Set aside.
- In another bowl, combine diced tomatoes, red onion, jalapeño, cilantro, lime juice, and salt. Mix well and let it sit to allow the flavors to meld.
- Preheat the grill or grill pan over medium-high heat. Once hot, place the marinated fish on the grill and cook for about 3-4 minutes per side, depending on thickness, until the fish flakes easily with a fork.
- While the fish is cooking, warm the tortillas on the grill for about 30 seconds on each side until they’re soft and pliable.
- Once the fish is done, remove it from the grill and break it into pieces. Layer the fish onto each tortilla, drizzle with spicy mayo, and top with pico de gallo.
- Serve immediately with lime wedges on the side for squeezing over the tacos.
Notes
Keep an eye on the fish while it cooks; you want it to be perfectly flaky but not dry. You can marinate the fish a few hours in advance or even the night before for deeper flavor.
