Description

This savory French onion pot roast combines tender beef, rich onions, and aromatic herbs to create a comforting and flavorful dish perfect for cozy dinners. It’s simple to prepare and gets better as it simmers.


Ingredients

  • 34 lbs chuck roast
  • 2 large onions, thinly sliced
  • 4 cloves garlic, minced
  • 4 cups beef broth
  • 2 tablespoons soy sauce
  • 1 tablespoon Worcestershire sauce
  • 2 teaspoons dried thyme
  • Salt and pepper, to taste
  • Olive oil, for browning

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. Generously sprinkle salt and pepper on all sides of the chuck roast.
  3. Add 2 tablespoons of olive oil over medium-high heat in a Dutch oven. Once hot, carefully place the roast in the pot and sear for about 4-5 minutes on each side, until browned. Remove the roast and set it aside.
  4. In the same pot, add the sliced onions and cook for about 10 minutes, stirring occasionally, until they’re soft and starting to caramelize.
  5. Stir in the minced garlic and cook for an additional 1-2 minutes until fragrant.
  6. Pour in the beef broth, scraping up any browned bits from the bottom.
  7. Stir in the soy sauce, Worcestershire sauce, and thyme.
  8. Place the seared chuck roast back into the pot, ensuring it’s submerged in the liquid.
  9. Cover the pot with a lid and transfer it to the preheated oven. Cook for 3-4 hours, or until the meat is fork-tender.
  10. If using a meat thermometer, the internal temperature should be around 190°F (88°C).
  11. Remove the pot from the oven and let the roast rest for at least 15 minutes before slicing.

Notes

For a gluten-free option, swap soy sauce for tamari. You can also add carrots or potatoes for a heartier meal.
