This savory French onion pot roast combines tender beef, rich onions, and aromatic herbs to create a comforting and flavorful dish perfect for cozy dinners. It’s simple to prepare and gets better as it simmers.

- 3–4 lbs chuck roast
- 2 large onions, thinly sliced
- 4 cloves garlic, minced
- 4 cups beef broth
- 2 tablespoons soy sauce
- 1 tablespoon Worcestershire sauce
- 2 teaspoons dried thyme
- Salt and pepper, to taste
- Olive oil, for browning
Instructions
- Preheat your oven to 325°F (160°C).
- Generously sprinkle salt and pepper on all sides of the chuck roast.
- Add 2 tablespoons of olive oil over medium-high heat in a Dutch oven. Once hot, carefully place the roast in the pot and sear for about 4-5 minutes on each side, until browned. Remove the roast and set it aside.
- In the same pot, add the sliced onions and cook for about 10 minutes, stirring occasionally, until they’re soft and starting to caramelize.
- Stir in the minced garlic and cook for an additional 1-2 minutes until fragrant.
- Pour in the beef broth, scraping up any browned bits from the bottom.
- Stir in the soy sauce, Worcestershire sauce, and thyme.
- Place the seared chuck roast back into the pot, ensuring it’s submerged in the liquid.
- Cover the pot with a lid and transfer it to the preheated oven. Cook for 3-4 hours, or until the meat is fork-tender.
- If using a meat thermometer, the internal temperature should be around 190°F (88°C).
- Remove the pot from the oven and let the roast rest for at least 15 minutes before slicing.
Notes
For a gluten-free option, swap soy sauce for tamari. You can also add carrots or potatoes for a heartier meal.
