  • Olive oil (for brushing)
  • Cornmeal (optional, for dusting baking sheet)
  • 1 cup mashed potatoes (creamy style preferred)
  • 1 clove garlic, minced (optional)
  • Salt & black pepper, to taste
  • 1 cup cooked turkey breast or thigh, sliced or shredded
  • 1/2 cup stuffing, crumbled (optional)
  • 1/4 cup gravy (optional, for drizzling)
  • 1 1/2 cups shredded mozzarella cheese
  • 1/2 cup grated parmesan cheese
  • 1/4 cup cranberry sauce (whole berry or jellied)
  • 1/4 cup chopped fresh parsley
  • 1/4 cup thinly sliced red onion (optional)
  • Fresh thyme leaves (a sprinkle)

Instructions

  1. Preheat oven to 450°F and place pizza stone or baking sheet inside for at least 20 minutes.
  2. In a small bowl, mix mashed potatoes with garlic (if using), salt, and pepper until smooth. Microwave briefly if cold.
  3. On a lightly floured surface or parchment paper sprinkled with cornmeal, roll or stretch pizza dough into a 12-inch round. Let rest if dough shrinks.
  4. Brush dough with olive oil. Spread mashed potato mixture evenly, leaving a 1-inch border.
  5. Sprinkle half the mozzarella over potatoes. Layer turkey slices and scatter stuffing bits. Drizzle with gravy if desired.
  6. Add remaining mozzarella and parmesan. Top with red onion, parsley, and thyme. Brush exposed crust with olive oil for crispiness.
  7. Bake pizza for 12-15 minutes until crust is golden and cheese is bubbling. Rotate halfway for even baking.
  8. Remove from oven and dollop or drizzle cranberry sauce over top. Let sit for 2 minutes before slicing.
  9. Slice with a sharp pizza cutter or serrated knife. Garnish with extra herbs if desired and serve hot.
