  • 2 cans young green jackfruit in brine, drained and rinsed (each can about 14 oz)
  • 1 cup all-purpose flour (can use gluten-free blend)
  • 1 cup unsweetened plant milk (soy, oat, or almond)
  • 1/2 cup cornstarch
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1 tsp smoked paprika
  • 1/2 tsp ground black pepper
  • 1/2 tsp sea salt
  • 1 tbsp soy sauce (or tamari for gluten-free)
  • 1 tbsp hot sauce (Frank’s RedHot recommended)
  • 1 tbsp apple cider vinegar
  • 1 tsp maple syrup
  • 1/2 tsp dried thyme
  • 1 cup panko breadcrumbs (use gluten-free if needed)
  • 1/2 tsp cayenne pepper (optional)
  • 1/2 tsp dried oregano
  • 1/3 cup hot wing sauce
  • 2 tbsp vegan butter, melted
  • 1 tbsp maple syrup or agave nectar
  • Vegan ranch or blue cheese dressing (optional)
  • Celery sticks (optional)
  • Fresh parsley (optional)

Instructions

  1. Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper or a silicone baking mat.
  2. Drain and rinse jackfruit. Shred pieces into strips, removing seeds and tough core bits. Pat dry with paper towels.
  3. In a large bowl, combine soy sauce, hot sauce, apple cider vinegar, maple syrup, and dried thyme. Toss shredded jackfruit in marinade and let sit for 10 minutes.
  4. In another bowl, whisk together flour, plant milk, cornstarch, garlic powder, onion powder, smoked paprika, black pepper, and salt until thick and smooth.
  5. In a shallow bowl, mix panko breadcrumbs, cayenne pepper (if using), and dried oregano.
  6. Dip marinated jackfruit pieces into batter, shake off excess, then roll in panko mixture. Place coated pieces on lined baking sheet.
  7. Bake wings for 20 minutes, flip each piece, then bake another 12-15 minutes until golden and crispy.
  8. While wings bake, melt vegan butter in a small saucepan. Stir in hot wing sauce and maple syrup. Keep warm.
  9. Transfer baked wings to a large bowl. Pour warm sauce over and gently toss to coat.
  10. Serve wings on a platter with vegan ranch, celery sticks, and fresh parsley. Let cool for 2-3 minutes before serving.

Notes

Double-dip for extra crispiness. Don’t overcrowd the tray for best results. Use a wire rack if possible for even crisping. Adjust spices to taste. For gluten-free, use GF flour and panko. Wings can be made ahead and reheated in oven or air fryer. Broil briefly if wings look pale after baking.
